Vegetarian Sandwich with potato and onions
In this sandwich, the potato is mixed with onions, fresh coriander leaves, salt and black pepper powder. This flavourful potato is pressed in between two triangular slices of bread and gives a yummy treat to our taste buds. Then the sandwich is just heated and fried in very little oil; this procedure enhances the taste of the sandwich. Everyone at my home loved this sandwich. Ingredients required for making Potato Sandwich
Half pound sliced bread
1 cup fresh coriander leaves
Black pepper powder to taste
Salt to taste
Little oil or butter for tossing the sandwich
Green chillies chopped (optional)
Time for preparation: 15 minutes
Time for cooking: 10 minutes

How to prepare Potato Sandwich
First, we will wash the whole potatoes, put them from middle and boil them with the peel.
Once the potatoes cooked well, remove the peel and keep it dry in a plate or bowl.
We are also going to chop the coriander leaves; it should be finely chopped.
Now take the boiled potatoes and mash them properly. After that, Make sure no lump is formed.
Add the black pepper powder, chopped onion, chopped coriander leaves, green chillies and salt and mix everything properly.
Now take the bread slices and cut them into a triangle shape.
Take one triangle shape bread slice and insert the potato mixture and spread it evenly, then retake triangle shape bread and cover it from the top. Press it firmly to stick both the bread with the potato mixture. Repeat the same with all the bread slices and keep them ready in a plate.
Now heat a pan, grease it with little oil and then cook the sandwich on both the sides.
Our delicious and yummy potato sandwich is now ready. Serve it hot with tomato ketchup.
